Any Apple upgrades could potentially break the jailbreak -- luckily the iPod Touch can easily be restored to factory defaults just by holding the home and power key down for 20 or so seconds.

In the meanwhile Steve Jobs has announced that third party apps will be allowed and an SDK is coming in February. They're still working on improving security, working out ways of signing apps etc.

There are multiple apps that customize the interface so I would not be surprised if there is something out there that allows you to remove buttons or that trash can feature you talk about.

Peter,

Will you now (have to) avoid future upgrades from Apple?

On a freed unit, can the TIFF hole be plugged w/o upgrading (from Apple)?

Can the iTunes button be made to go away? Have you found (enabled) a way (trash can) to delete individual images?

IMHO, Apple should have their bare bottoms publicly spanked for having released the unit not only w/o the Notes feature, but with the Calendar feature without the ability to enter any events.
